Time for another recipe! I've been wanting to try Spaghetti Squash for a while and finally found a recipe that looked easy enough! It turned out so good! Hope you enjoy!
Ingredients:
Spaghetti Squash
1 onion
1 tomato
1 clove garlic, minced
Feta cheese
2 tablespoons vegetable oil
Directions:
1. Cut spaghetti squash in half with a large knife and place each side face down on a cookie sheet. Bake for 45 minutes at 350 degrees.
2. Heat oil in a skillet over medium heat. Saute the onion in oil until tender. Add garlic, saute for 2-3 more minutes. Stir in the tomatoes, and cook only until warm
3. Take squash out of the oven, use a fork to scrape the stringy pulp from the sides.
4. Place stringy squash into medium bowl and toss with the sauteed vegetables and feta cheese.
